
Six Steps To Sugo Pasta’s Italian Pasta Dish
The weekend is in sight and whether you will be braving bars or staying safe at home, we bring you the Italian inspired Strozzapreti with broccolini and anchovy butter courtesy of Sugo Pasta Kitchen.
Ingredients
100g Jar of Anchovies
150g Unsalted butter
2 Garlic cloves
1 Dried red chilli
100ml Chicken stock
250g Broccolini
350g Strozzapreti pasta (or whatever pasta you have)
Grated parmesan
Salt and pepper
Step one
Bring a large saucepan of water to the boil. Add a generous amount of salt and then add your pasta.
Step two
To make the butter, finely chop drained anchovies and gently fry with a little oil until they melt, then leave to cool.
Once cooled, blitz the anchovies and mix well with softened butter.
Step three
Gently fry the garlic and dried chilli, until the garlic turns a nice golden-brown colour. Add the chicken stock, bring to the boil then simmer for 5 minutes.
Step four
Chop your broccolini into small pieces then add the stock. Continue to simmer for 2 minutes.
Step five
Add your cooked pasta, anchovy butter and parmesan to the pan. Gently toss until everything is well combined.
To note, it should have a velvety finish to it.
Step six
Serve with a generous helping of parmesan and of course a glass of wine.
