Six Steps To Butternut Curry

Colourful, fragrant and full of texture, this week for the Tessuti six at six we’re cooking up butternut curry with spinach and cashews for a healthy well-balanced meal. Stay safe at home becoming an expert in the kitchen with our six step guide below.


(Serves 4)

Medium butternut squash 2 1/4lb (1kg)

1 onion

4tbsp of vegetable or sunflower oil.

2 garlic cloves

1 small piece of fresh ginger

1 small hot green chile

1tsp ground turmeric

1tsp cumin seeds

1stp ground coriander

2 cinnamon sticks

½ cup (100g) red lentils

1 (400g) can of chickpeas, drained

¾ cup (100g) cashew nuts

2 handfuls baby leaf spinach

Salt and pepper


Serve with chapatis, naan bread or rice along with relish or chutney.


Step one:

Peel the squash using a good peeler or sharp knife. Cut into 4 pieces and scoop out the seeds. Then cut into large cubes roughly about 3cm across.


Step two:

Halve and slice the onion. Put into a large frying pan or wok over a medium-high heat. Add the oil and the butter, then add the squash and onions, seasoning with salt and pepper. Cook for 5 minutes stirring often, until the vegetables are starting to soften.


Step three:

Whilst the vegetables cook. Boil a saucepan or kettle of water. Stir the garlic, ginger, chile and spices into the pan and cook for 2 minutes until fragrant and the vegetables are coated in spice.


Step four:

Stir in the lentils, then pour 400ml boiling water. Cover and simmer for 10 minutes, stirring a few times. Preheat the oven to 180c. Coarsely chop the tomatoes and mix with the chickpeas.


Step five:

Cover the pan again for another 10 minutes, stirring once or twice. The lentils should be plump and tender. Season the curry with salt and pepper.


Step six:

Toast the nuts in the oven until golden. To finish the dish, stir in the spinach leaves and sprinkle the nuts over the top.


Serve with your choice of naan breads or rice and your favourite chutney.
